Ingredients
2 cups Blue Lake Milling Rolled Oats
2 cup plain flour
1 1/2 cups desiccated coconut
1 1/4 cups brown sugar
1/2 tsp salt
250g unsalted butter
4 tbsp golden syrup
1 tsp bicarbonate soda
2 tbsp hot water
Method
Preheat the oven to 170°C fan forced, and line a small square mould tray or large tray with oil or butter.
In a large heat-proof bowl, combine the oats, plain flour, desiccated coconut, brown sugar, and salt.
In a small jar, dissolve the bicarbonate soda in the hot water. Put aside.
Place a saucepan on medium/high heat, melt the butter, and stir through the golden syrup until combined.
Add the bicarbonate/water mix to the saucepan and allow the mixture to froth, mixing as you add.
Mix the wet mixture into the large bowl of dry ingredients and stir until well combined.
If using a mould tray - separate the mixture evenly across the squares, pressing down to 3/4 full to allow the bars to rise.
Bake at 170°C for 25 minutes, or until golden brown.
Set aside to cool before removing from the tray and wait at least 30 minutes before cutting into squares.
Tip :
For an extra sweet touch, add 1/2 cup of milk or dark choc chips before baking!
